I have come to strongly believe that the key to survival on Nevis is to have a large selection of recipes........for Happy Hour! Today the recipe is for Peach Bellinis. You will need:
- Peach Drink Mix (it can be powdered crystals or from concentrate)
- One Bottle Champagne
- Two cans 7-Up (approx 2 1/2 cups)
- 1 1/2 cups Rum (amber or spiced rum is best but white works too)
- Sangria (red wine, 7-up, brandy and orange juice)
Make your juice mix like you would normally, except instead of water you will use the 7-Up and Champagne. Just a word of caution; be careful stirring because the mix will bubble and foam over. This mix will need to be frozen. I put mine in a large ziploc bag. After it is frozen you will add this to your blender with rum and blend well. Pour into chilled martini glasses and top with Sangria. Cheers!!!
